Mouth-watering Pulled Pork Recipe for Your Instant Pot!

The Instant Pot Duo Crisp has been a really great addition to our travel trailer kitchen! I know sometimes it’s difficult to know what appliances can be run in a travel trailer. According to the manufacturer, the 8-quart model we have is 1500 watts. We do need to be connected to shore power to run it as our inverter isn’t able to keep up with all the other things drawing battery power. A powerful generator could work though, but alas, that’s an accessory we have yet to add to our setup. We just make sure we aren’t trying to run. multiple appliances while using our instant pot so we are good to go! With it’s fall off the bone tenderness and great smoky flavor, pulled pork cooked in the instant pot will be your new favorite especially if you pair it with our Alabama White Sauce recipe!


First Things First

Let’s make the rub for the pork shoulder. You can use your favorite jarred rub seasoning if you’d like, but this one is super easy AND super tasty! Most of you probably even have the ingredients for this simple spice mix in your pantry already. All you need is:

  • smoked paprika
  • garlic powder
  • onion powder
  • salt and pepper

Just mix these spices together in a small bowl and you’re all set!

Cooking the Pork

To get the pork ready for pressure cooking, you’ll want to have your pork shoulder roast cut into roughly evenly size pieces. I use bone-in and am sure it makes it in to cook as well. It adds a better depth of flavor, I think. Feel free to use boneless if you’d prefer that.

Once you have your pork in pieces, pat them. dry with a paper towel then spread your rub on all sides. Next, add some oil to the bowl of your Instant Pot and set it to saute. When the oil is good and hot, working in batches, sear the pork on all sides, setting pieces aside on a plate until all of them are browned.

Now, you’ll want to do some deglazing. First, add in a little of the beef broth and scrape up all the tasty bits from the bottom of the pot. Next, add the remaining broth, diced onion, and the seared pork pieces. Now, set the Instant Pot to high pressure for 80 minutes (less if you are using leaner cuts of pork). When the time is up, let the pressure release naturally for about 15 minutes.

Manually release the rest of the steam and remove the lid. Grab a couple of forks or a pair of tongs and shred the pork right in the sauce.

This delicious pulled pork can be used for anything from sandwiches to a baked potato topping, but our favorite is Pulled Pork Nachos!

To make the pork rub

  • In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Rub the mixture on the chunks of pork.
    Seasoning the pork

To cook the pork

  • Add the oil to the Instant Pot and turn to SAUTE. Once the oil is hot, add some of the pork pieces (do not overcrowd) and brown on all sides. Remove to plate and continue with the rest of the portions of pork.

  • Add half of the broth to the Instant Pot. With a wooden spoon, deglaze the pot by scraping up all of the stuck-on bits of food and seasoning.
  • Add the rest of the broth and the onion to the pot.
  • Return the pork to the Instant Pot. Cover, seal, and cook on HIGH (manual) pressure for 80 minutes.
  • Once the pressure has built and the cook time has elapsed, allow the pressure to release naturally for 15 minutes (do not open immediately or the meat may be tough).**
  • Vent to release any remaining pressure then carefully open the Instant Pot.
  • Using forks or tongs, shred the pork in the pot.***

  • Scoop out all the pork and onions that had cooked along with the meat and place it in a container until ready to serve.

Notes

*I prefer using a bone-in pork shoulder/butt roast for this recipe. You can use boneless if you’d like.
**If after you’ve released the residual pressure and opened the lid, you find the meat is not fall apart tender, you can replace the lid and cook for a little longer at high pressure.
***You can remove the pork to a bowl for this step, but I find it just as easy or easier to use tongs to pull apart/shred the meat right in the instant pot.
