What is Alabama White Sauce?
Alabama white sauce, sometimes called Alabama BBQ sauce, isn’t your traditional tomato-based barbeque sauce. I’m not the biggest fan of tomatoes or the garden variety of red barbecue sauces, so I wanted to make a sauce that complemented foods like my Instant Pot Pulled Pork or my husband’s amazing smoked brisket.
Alabama white sauce is made with mayonnaise, vinegar, and other seasonings that give it it’s creamy texture and zesty flavor. Not only is it a good dipping or drizzling condiment, it makes a great marinade or basting sauce.
Why is it called “Alabama” White Sauce?
Alabama white sauce is a signature barbecue sauce that originated from northern Alabama, more particularly associated with Big Bob Gibson’s BBQ restaurant in the town of Decatur. The story goes that Big Bob Gibson began experimenting with different barbecue sauces in the 1920s, eventually creating what would become known as Alabama white sauce. Originally used as a basting sauce for chicken, the sauce quickly gained popularity among locals and visitors alike for its unique flavor profile.

All you have to do to make this Alabama white sauce recipe is put all of the ingredients into a mixing bowl and whisk until it’s smooth. If you like a thinner sauce, you can add a little splash more of the vinegar. Enjoy!
